The Rees Culinary Series with Billecart-Salmon and Mountford Estate
The House of Billecart-Salmon is in the heart of Champagne by the charming village of Mareuil-sur-Aÿ and has been independently owned for 200 years.
Producers in the very best of champenois tradition of “Grand Cru”, the House began in 1818 with its founders, Nicolas François Billecart and Elisabeth Salmon upholding the value of excellence. It’s no wonder with those superb standards that it has been a sponsor of the Grammy awards.
Established in 1991, Mountford Estate is a boutique vineyard and winery set on a hillside in the Waipara region in North Canterbury of the South Island. It grows on an area of land dubbed ‘The Golden Mile’. A high amount of heat and light, combined with the soil make-up of clay on top of marl with active limestone deposits makes this site particularly special. Emphasis is placed on using biodynamic methods in the vineyard and, from the moment a young vine is placed into the earth to the harvesting of the grapes, right through to the winemaking practices, as much as possible is carried out by hand and even foot.
This wonderful evening will be created by Chef Corey putting his take on fresh Central Otago seasonal ingredients, whilst matching with our two wonderful winery partners. Mountford Estate winemaker Matt Barbour will be hosting this evening, who has extensive viticulture knowledge. He has travelled between vintages in New Zealand, France and Australia before settling back in North Canterbury with his wife in 2014. Matt found himself nurturing a growing penchant for Pinot Noir and Chardonnay, so when the opportunity arose in 2017 to work at the prestigious Mountford Estate; Matt knew it was perfect timing.
